Death in the Afternoon Cocktail

⁠’Death in the Afternoon’ is – as you can guess from the name – just as lethal as it is delicious. Conceived by The Herball and using plenty of our aromatic plants, this cocktail is like the vintage feel of shots but for special occasions! A mix of herb-scented spirit, honey, and ice-cold champagne. ⁠The bubbles merge beautifully with the herb-infused pomace of fennel seeds, sage, thyme, and rosemary. It is an excellent festive welcome drink for lovers of old-school cocktails.


For the scented pomace


Take a bottle of your favorite Grappa, Tsipouro, Marc, or Trester (or vodka if preferred) and pour it into a jar that can be closed. Keep the bottle!

Fill the same jar with 1 tbsp each of fennel seeds, sage, thyme, and rosemary. Close the jar tight and leave it overnight, or if possible, put it in the oven at 50°C for 2 hours. The next day or after infusion, pass the liquid through a coffee filter, fine strainer, and bottle again.


For the cocktail


Take a champagne or white wine glass and pour:

15-20ml of herb-infused spirit - depending on the desired intensity

1 tsp of runny honey or granulated sugar

Top with ice-cold champagne

1 tbsp Sage
1 tbsp Thyme
1 tbsp Rosemary
