Our Fennel Seeds come from Evia, an island with a long tradition of cultivating this sweet, beautifully balanced variety. They have a sweet, surprisingly intense aromatic taste without the typical fennel bitterness. Our supplier, a second-generation fennel farmer, tends his family-owned fields in person, and ensures we receive the finest part of the harvest every year. He’s the reason for our love for good fennel!

Born in the Mediterranean, fennel is one of the world’s most widely used aromatic plants. There’s a long list of varieties, with climate and geography playing a vital role in affecting quality. High-quality fennel contains many valuable compounds such as calcium, flavonoids, minerals, amino acids, and fatty acids. In addition, it’s excellent as a digestive and helps to ease stomach muscle spasms. To summarize, our fennel makes a pleasant-tasting herbal tea with great health benefits!

If a recipe calls for one teaspoon, ½ will do the job. Its balanced flavor makes it easily combinable and equally successful in sweet or savory recipes. Its licorice fragrance adds richness and depth to sauces. Get equipped with a mortar and pestle – it will be helpful for your chili/fennel, pepper/fennel, and almond/fennel mixes. The first two will take pork and oily fish to another level; the third one is ideal for cookies.

To make fennel tea, infuse a teaspoon of seeds at 95°C, cover, and steep for 5 minutes. Strain and serve. You can gently crush the seeds before infusing them to enhance the release of essential oils.
