The infusion of Sage has been one of Greece’s most popular herbal teas for centuries. In ancient times, it was considered a sacred tree dedicated to god Apollo. Nowadays, in Crete, it is a widespread belief amongst the locals that they owe their longevity to the herb!
Sage balances poultry, game, and pork roasts. It makes an ideal flavoring for herbed butter. This variety makes a mark even when used in tiny quantities. Add a few leaves during cooking, and discard them before serving. Alternatively, grind a few leaves with coarse salt and black pepper as a finishing herb.
