In Greece, especially Crete, it is typically enjoyed as an herbal tea and rarely as a food seasoning. This robust variety of Sage answers to the Latin name Salvia Fruticosa and grows wild throughout the Aegean Sea islands. It has smaller, thicker leaves than the typical European Sage and a more pronounced taste and aroma. Interestingly, it tends to be more intense when it grows in arid soils. Our selection comes from an organic farm in Crete, where all herbs are dried naturally and processed by hand.

The infusion of Sage has been one of Greece’s most popular herbal teas for centuries. In ancient times, it was considered a sacred tree dedicated to god Apollo. Nowadays, in Crete, it is a widespread belief amongst the locals that they owe their longevity to the herb!

You’ll need 1 tsp (0.5 g) per 250 ml cup of Sage tea. Brew for 5 minutes at 95°C, covered. Strain and serve alone or with honey. Folklore herbal medicine suggests that lemon and honey-infused Sage is an effective remedy for the flu.
