The recipe for this herbal drink was created for Daphnis and Chloe by our friend Christina. It comes as a light, sugar-free syrup which can be made ahead of time and stored in the fridge for up to 5 days, even though it will be more fragrant when consumed within 24 hours. You can use it to make a non-alcoholic refreshment with ice and sparkling water or as a mixer for homemade mojitos!

 

Procedure


Place all the ingredients except the Pennyroyal Mint into a saucepan. Cover with a lid and bring to a boil. Remove from the stove, add the Pennyroyal Mint, cover with the lid and infuse for no longer than 10 mins. 

 

Strain into a glass jar, let it cool, and refrigerate for at least 2 hrs hours before serving.


To prepare a non-alcoholic refreshment:
use ⅓ syrup with ⅔ sparkling water. A regular serving is 135 ml. You can also serve with herbal ice cubes, to be made ahead with a plain Pennyroyal and water infusion.


To make Pennyroyal Mojito:
use 1 long shot (45 ml) of the syrup, 1 shot (45 ml) of white rum, and a splash of sparkling water. Serve with plenty of ice and garnish with lime and a sprig of Pennyroyal.

190 ml water
95 g thyme honey
the zest of 1 lemon, finely grated
1 slice lemon
1 thumb ginger (25 g) finely sliced
½ cup (3-4 g) Pennyroyal Mint
