The Daphnis and Chloe Za’atar
Za’atar -the most emblematic Lebanese spice blend- is never really made in the same way. Interestingly, each family preserves its own recipe with a unique twist.
After experimenting with various alternatives, we got to create Daphnis and Chloe za’atar version that contains two of our herbs.
Tip: Your homemade Za’atar will be much richer in flavor if you make it right before use – quality herbs start losing their flavor soon after being grinded, as their essential oils evaporate. If you are planning to make a large batch, store your blend in an airtight jar.
3 tsp thyme flowers, freshly grounded
2 tsp sumac
1/2 tsp salt
1 tsp sesame seeds, preferably freshly toasted
Blend the thyme flowers, sumac, salt,
sesame seeds and marjoram in a spice grinder
and mill them until you get a fine powder.
Can be enjoyed with olive oil and bread, or sprinkle over hummus and serve with warm pita bread as a healthy dip/appetizer for any kind of meal.
