Two-Mint Lemonade

Last month we spent some time on the attic of Philos in Athens, shooting the new still lifes of our herbs. Marilena who runs this beautiful shop & cafe, prepared for us the most delicious two-Mint Lemonade. She used our Sweet Peppermint and Pennyroyal to give a herbal kick to this staple recipe of Philos and we liked it so much that we asked to share it on the blog.

Ingredients for 4 glasses:

8 fresh lemons

4 large spoons white sugar

4 espresso shots (or 1 cup) boiling water

 1 spoon dried peppermint

1 spoon pennyroyal mint

 fresh spearmint for the garnish

Procedure:

Steep the dried mints in the boiling water for 5 minutes
Dissolve the sugar in the warm herbal infusion
Peel and squeeze the lemons, keep the peels aside for the garnish
Mix the lemon juice with the herbal infusion.
Garnish a cup with spearmint leaves and the lemon zest.

Add ice, pour the lemonade and serve

Extra Tip: To calculate how to make more (or less) servings, keep in mind that the perfect analogy is 2 lemons, 1 spoon sugar and 1 shot of the Two-Mint infusion per person.
