Red Lentil and Mint Soup

Red lentil Soup with Mint

This recipe belongs to Chrissa, “a professional home cook” who also happens to be a neighbour. Her company delivers warm lunch in a Tupperware, more or less how a loving mother would do.

Ingredients:

200 g red lentils

one big onion (finely chopped)

one celery (finely chopped, leaves discarded)

one spoon dried mint leaves

1cup vegetable stock

2-3tbsp olive oil

Procedure:

Pour the lentils in a pot, cover with water

and let simmer for 15 minutes.

Add the finely chopped vegetables, mint

and vegetable stock and let simmer for another 30 minutes.

No need to use salt for this recipe salt,

unless it is not included in your vegetable stock. Enjoy warm!
